MAC Shiraz forms part of Bird in Hand's Tribute Series, a rare, artisanal range of wine that showcases the pinnacle of the estate's winemaking expertise.

Ripe blackberry, cedary oak and peppery, cool climate spice are all evident on the nose. Intense dark berries lead to a richly-textured, savoury mid palate where powerful but elegant French oak adds length and complexity with a long, silky finish. This is a rich and elegant cool climate Shiraz.

Vintage conditions

The 2013 vintage was warm and dry with an even ripening season that produced small but intensely-flavoured berries. The quality of fruit was evident when tasting in the vineyard.

Vinification details

The grapes were crushed into small open fermenters which were pumped over twice daily for a minimum of seven days to maximise colour, flavour and tannin extraction. Individual parcels of Shiraz were then graded by the Bird in Hand winemakers and those deemed worthy of MAC status were pressed into the finest tightly-grained French oak barrels (60% new oak) for a minimum of 24 months’ maturation.

All batches were kept separate until blending and samples were taken from each individual barrel for further assessment by the winemaking team who selected only six barrels for the final wine, those that showed intense fruit character, complexity, balance and high quality tannin structure for ageing.

The MAC Shiraz is deep red in colour with dense aromas of ripe wild berry fruit, spice and pepper. The complex palate of dark berry, dark chocolate, white pepper and aniseed are woven into a rich, silky palate, with a long lingering finish.

Vinification details

Grapes were hand picked in perfect condition and crushed into small open fermenters. Each fermenter was pumped over twice a day for a minimum of seven days to maximise colour and flavour and tannin extraction. The wine was then graded by three winemakers and, having achieved M.A.C status, was pressed into the finest French oak barrels for a minimum of 24 months’ maturation. All batches were kept separate until blending and samples taken from each barrel. These were assessed by the winemaking team who looked for fruit complexity colour, texture, and tannin structure to put together the best possible blend worthy of the Tribute Series.
