Topiary's widely acclaimed Chardonnay vineyard sits above the cellar on some of the rockiest and poorest soils to be found on the farm which give extremely small and concentrated berries.

Subtle citrus cream notes on the nose combine with candied lemon, hazelnuts and vanilla. The palate is rich with a taut mineral freshness balanced by honeyed white peach and yellow plum. This would not be out of place amongst the best Chardonnays from Burgundy.

Vintage conditions

The 2015 vintage saw perfect conditions with dry and sunny but relatively cool days during January. A smallish crop, but definitely a stellar vintage.

Vinification details

The wine was settled and fermentation started with wild yeast in stainless steel tanks for one week before it was transferred to 450L Roussouw piano barrels (25% new) to complete alcoholic and malolactic fermentations, with bâtonnage every two weeks.
