Vinification details

Each parcel of Shiraz is assessed, and the most outstanding selected for Old Adam. The concentrated, high quality parcels of fruit were then fermented in open vats and matured for 22 months in new, specifically-selected, extra fine grain American oak. An additional 12 months’ maturation in bottle allows full integration of oak and fruit tannin.
